Freekeh and Pomegranate Salad

1/2 cup of Freekeh – cooked as per instructions on pack
1/2 Pomegranate – scoop out seeds (discard pith)
1/2 packet of Rocket leaves
1 beetroot – roasted, cooled and sliced
1 cucumber – diced
1/2 cup of pecans – roasted and broken into smaller pieces
6 cherry tomatoes – cut into quarters
handful of chopped parsley for dressing

Dressing:
Juice of 1/2 orange with 1/2tsp of cinnamon

Method:
Cook freekeh as per instructions on pack, drain and allow to cool
Mix in with all other ingredients
Add dressing and garnish with chopped parsley
